This salad is so light and fresh, but hearty and satisfying at the same time. Typically, I pair arugula with sweet fruits, but this is my favorite savory combo when I want to reset my sweet tooth. It’s full of so many different textures to keep you entertained until the last bite. Keep as a side, or add protein for a main dish.
Savory Arugula Salad
- 1 large package of arugula
- Olive oil, for drizzling
- Juice of 2 Lemons
- Salt + pepper
- Red bell pepper, chopped
- Cucumber, chopped
- Farro, cooked and cooled
- Crunchy roasted chickpeas, store-bought or homemade
- Feta cheese, crumbled
- Pistachios, chopped
- Avocado, sliced
- Primal Kitchen Goddess Dressing (optional)
- Chicken, or other protein (optional)
Dress greens with a drizzle of olive oil, lemon juice, salt, and pepper. Allow to wilt a bit while you chop up ingredients.
Throw in all ingredients except avocado and toss thoroughly. Add Primal Kitchen Goddess Dressing for additional flavor, or just keep it simple with lemon. Serve with sliced avocado on the side.
